Skillet Cacciatore

Ingredients
1 package PERDUE® Boneless, Skinless Chicken Breasts
2 tablespoons olive oil
2 medium red bell peppers, core removed, sliced
1 large onion, peeled and sliced
1 can (28 ounces) diced tomatoes with garlic, basil and oregano
Ground pepper to taste
Instructions
- Coat a large no-stick skillet with oil and heat over high heat. Add chicken and brown for 1 minute on each side.
Remove chicken and set aside.
- Reduce heat to low and add peppers and onion to skillet. Cover and cook 8 minutes, stirring occasionally.
- Add chicken, tomatoes and ground pepper. Cover and simmer 8 minutes until meat thermometer inserted in center registers 170° F. Serve with pasta if desired.
